  1. Trim ends and sides off potatoes and cut into sticks 1/4 inch by about 3 inches.
  2. Fry once in deep fryer at 325°F in vegetable oil until tender and just starting to turn color.
  3. Drain and let cool.
  4. Fry again at 375°F for 1 to 2 minutes until crisp and brown.
  5. Drain; toss with salt and serve immediately.
