Ingredients

  • fruit
  • 2 to 3 lb. sugar
  • 1 tsp. dry yeast
  • 1/2 slice bread

Instructions

  1. Wash the fruit thoroughly.
  2. Put the fruit in a large kettle and cover with water.
  3. Cook until the fruit is soft, but not mushy.
  4. Strain the juice through a cloth.
  5. Cool the juice and measure into a stone or enamel crock or jar.
  6. For each gallon of juice, add 2 to 3 pounds of sugar.
  7. Mix 1 teaspoon of dry yeast into a paste and spread on half a slice of bread.
  8. Place the yeast side down on the juice.
  9. When the juice begins to foam, remove the bread.
  10. Allow the fermentation process to work for several days.
  11. Skim as needed during fermentation.
