- Wash the fruit thoroughly.
- Put the fruit in a large kettle and cover with water.
- Cook until the fruit is soft, but not mushy.
- Strain the juice through a cloth.
- Cool the juice and measure into a stone or enamel crock or jar.
- For each gallon of juice, add 2 to 3 pounds of sugar.
- Mix 1 teaspoon of dry yeast into a paste and spread on half a slice of bread.
- Place the yeast side down on the juice.
- When the juice begins to foam, remove the bread.
- Allow the fermentation process to work for several days.
- Skim as needed during fermentation.
