Basic Ravioli Dough

Instructions
- Combine all ingredients and knead dough on a lightly floured board until smooth and elastic.
- Cover and let rest for 30 minutes.
- Divide dough in half.
- Roll out very thin into the shape of a rectangle.
- Trim to shape by cutting with a knife, if necessary.
- Lightly mark out 2-inch squares on the dough.
- Place 1 teaspoon of filling in center of each square.
- Roll out second piece of dough and carefully place over the top of the first. Lightly press down around mounds of filling and cut into 2-inch squares with pastry cutter.
- It may help to seal the dough by sprinkling lightly with water before placing top over the filling. Cook in boiling, salted water until they rise to the top.
- Remove with slotted spoon and serve as any pasta.
