Ingredients

  • 3 large egg whites
  • 3/4 cup sugar
  • 3 tablespoons water
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Instructions

  1. Mix all ingredients, except vanilla. Beat until foamy, about 1 minute.
  2. Place the bowl over simmering water, ensuring the bottom of the bowl does not touch the water.
  3. On low speed, beat for 10 minutes or until stiff peaks form.
  4. Remove from heat and add vanilla extract, then beat to combine.
