Ingredients

  • 1/4 cup chopped onion
  • 2 large cloves garlic, finely chopped
  • 1 tablespoon olive or vegetable oil
  • 2 cups chopped seeded tomatoes
  • 1 1/2 cups thinly sliced zucchini
  • 1/4 cup snipped basil leaves
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook and stir onion and garlic in oil in a 10-inch nonstick skillet over medium-high heat until the onion is tender, about 2 minutes.
  2. Stir in the chopped seeded tomatoes, sliced zucchini, and basil.
  3. Heat to boiling; reduce heat.
  4. Simmer uncovered until zucchini is crisp and tender, about 3 minutes longer.
  5. Stir in grated Parmesan cheese.
