Ingredients

  • 5 tablespoons flour, all-purpose
  • 60 grams butter
  • 1 each onions cut into strips
  • 1 litre beef stock prefer veal stock if possible

Instructions

  1. Cook flour in dry, hot skillet until light brown.
  2. (This can be done in advance, or in large amounts and used later).
  3. Add butter to flour and mix.
  4. Add onions and cook until softened.
  5. Add stock, bring to boil, and simmer 20 minutes.
  6. Serve with grated cheese.
  7. Add a dash of red wine if desired.
