Ingredients

  • 8 ripe medium tomatoes
  • 1/2 cup chopped parsley
  • 2 -3 teaspoons olive oil
  • 2 -3 tablespoons tarragon vinegar
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • 1/2 teaspoon sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • sliced black olives (to garnish)

Instructions

  1. Slice tomatoes and arrange in a shallow dish. Sprinkle with parsley.
  2. Combine remaining ingredients, except olives, drizzle over tomatoes.
  3. Garnish with olives.
