Battered Onion Rings

Ingredients

  • 2 to 3 lg. vidalia onions
  • 1 cup flour
  • 1/2 tsp. baking powder
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 3/4 cup milk
  • 1 egg
  • 2 tbsp. shortening, melted

Instructions

  1. Heat shortening to 375F.
  2. Peel and slice onions into 1/4-inch slices; seperate into rings.
  3. Sift flour with baking powder, salt, and sugar.
  4. Combine milk, egg, and melted shortening, add to dry ingredients all at once and beat until smoooth.
  5. Dip onion rings into batter and fry until golden brown.
  6. Turn once to brown evenly.
