Ingredients

  • 2 lb. stew beef, cut in 1-inch cubes
  • 3 or 4 tomatoes
  • 1 onion, coarsely chopped
  • 1 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1 c. dairy sour cream

Instructions

  1. Place beef in a 3-quart microwave casserole.
  2. Peel tomatoes and remove cores.
  3. Cut tomatoes into chunks.
  4. Add tomatoes to the casserole with beef.
  5. Add onion, salt, and pepper; stir well.
  6. Cover and cook on Roast for 40 to 50 minutes or until beef is tender, stirring twice during cooking.
  7. Stir sour cream into the mixture and let stand, covered, for 5 minutes.
