Ingredients

  • 1 lb. beef cubed steaks
  • 1 Tbsp. vegetable oil
  • 1 medium onion, chopped
  • 1/4 tsp. salt
  • 1 1/4 oz. pkg. taco seasoning mix
  • 2 (14 1/2 to 16 oz.) cans diced tomatoes (undrained)
  • 1 1/2 cups uncooked rotini (spiral) pasta
  • 1/2 cup water
  • 1/2 cup shredded Cheddar cheese

Instructions

  1. Cut beef steaks lengthwise into 1-inch wide strips and then crosswise into 1-inch pieces.
  2. In a Dutch oven, heat vegetable oil over medium-high heat until hot.
  3. Add beef and chopped onion; cook and stir for 3 minutes.
  4. Season with salt.
  5. Stir in taco seasoning mix, diced tomatoes (undrained), uncooked rotini pasta, and water.
  6. Bring to a boil.
  7. Reduce heat to low, cover tightly, and simmer for 20 minutes or until pasta is tender.
  8. Sprinkle shredded Cheddar cheese before serving.
