Beer Battered Prawns

Ingredients

  • 2/3 cup pale ale
  • 3 tbsp olive oil
  • 1 1/4 cup all-purpose flour
  • 2 1/3 cup vegetable oil, for frying
  • 1 None egg white
  • 18 None tail-on king prawns
  • 4 tbsp chopped fresh chives
  • None None Lemon wedges, to serve

Instructions

  1. Place the beer, olive oil and 2/3 cup water in a saucepan and heat gently. Place the flour in a bowl and gradually whisk in the liquid. Season with salt and pepper. Set aside for 10 mins.
  2. Heat the vegetable oil in a saucepan to 350°F, or until it shimmers.
  3. Using an electric hand mixer, beat the egg white in a bowl until stiff. Fold into the batter. Pull each prawn through the batter by the tail and lower each prawn into the oil. Fry for 2-3 mins, until golden.
  4. Remove from the oil using a slotted spoon and drain on paper towels. Sprinkle with chives then serve with lemon wedges.
