Beet & Apple Salad

- 1. Bring water to a boil and drop beets into pot.
- **You can also do this in the microwave, but make sure the beets are fully covered in a microwave safe bowl with water. Cook for 5 minutes and poke with a fork (then repeat until beets are soft).
- 2. While beets are cooking, mix together the honey and apple cider vinegar (or lemon juice).
- 3. Cook beets for 10-12 minutes. Drain and let cool. Then peel and chop into small pieces.
- 4.Chop apples into bite sized pieces. Crumble or crush walnuts
- 4. Mix together the beets, the apples, the walnuts, and sprinkle liberally with goat cheese. You can use feta if you want the salad to have a little kick, or chevre (etc) for a milder salad.
