Ingredients

  • Raw beets
  • Watercress or arugula
  • Sherry vinaigrette
  • Goat cheese

Instructions

  1. Grate raw beets (use the food processor to avoid ruining everything within spattering distance) and toss with watercress or arugula. Top with sherry vinaigrette and a little goat cheese.
