Ingredients

  • 2 or 3 cooked beetroots
  • 5 or 6 stalks celery
  • a little chopped parsley
  • salt and pepper
  • lemon juice

Instructions

  1. Cook the celery in boiling salted water; drain well.
  2. Chop the celery into conveniently-sized pieces.
  3. Cut the beetroot into similarly-sized pieces.
  4. Place the beetroot and celery in a pan.
  5. Add margarine or dripping, lemon juice, chopped parsley, salt, and pepper.
  6. Stir together over a gentle heat until thoroughly hot.
