Ingredients

  • 1 medium size cucumber, peeled and seeded
  • 1 (8 oz.) cream cheese, softened
  • 1/2 medium size onion
  • dash of salt
  • dash of red pepper
  • green food coloring

Instructions

  1. Grind cucumber pulp; place on cheesecloth and squeeze out the juice.
  2. Combine pulp with cream cheese, onion and seasonings, mixing thoroughly.
  3. Add a very small amount food coloring.
  4. Use for sandwiches or canapes.
