Ingredients

  • 2 lb. tender okra
  • 3/4 tsp. salt
  • 1/2 cup cornmeal
  • 1/2 cup shortening

Instructions

  2. Slice okra into 1/4-inch thick rounds and discard stem ends and tips.
  3. Sprinkle sliced okra with salt and roll in cornmeal to coat well.
  4. Heat shortening in a skillet until hot.
  5. Drop coated okra into hot fat and cook until golden brown, stirring often.
