Ingredients

  • 8 to 9 large ripe cucumbers
  • 3 1/2 lb white sugar
  • 1 pt white vinegar
  • 1/2 tsp oil cloves
  • 1/2 tsp oil cinnamon
  • salt
  • water
  • 1 jar maraschino cherries

Instructions

  1. Peel the cucumbers and cut them into 1-inch cubes.
  2. Sprinkle the cucumber pieces with salt and cover with boiling water.
  3. Cook until tender, then drain the cucumbers.
  4. Make a syrup by combining sugar, vinegar, and spices (oil cloves and cinnamon). Bring to a boil.
  5. Pour the hot syrup over the drained cucumbers and let stand overnight.
  6. Drain the syrup off and bring it to a boil again.
  7. Pour the boiling syrup over the cucumbers once more and let stand.
  8. The next day, boil everything together again.
  9. Add the maraschino cherries, cut into pieces.
  10. Seal the mixture in hot, sterile jars.
