Ingredients

  • 1 cup berries
  • 3/4 cup water
  • 3 tablespoons cornstarch
  • 1 cup sugar
  • 1 teaspoon lemon juice
  • 1 crust pie shell

Instructions

  1. Simmer 1 cup berries and 3/4 cup water in a saucepan for 3 minutes.
  2. Add 3 tablespoons cornstarch and 1 cup sugar to the berries. Cook until thick and clear (creamy).
  3. Add 1 teaspoon lemon juice and cool slightly.
  4. Pour the berry mixture over 1 1/4 cups to 2 cups fresh berries in a baked pie shell.
  5. Top with Cool Whip, if desired.
  6. Best eaten the first day.
