Ingredients

  • 1/4 cup shortening
  • 3 cups flour
  • 2/3 cup firmly packed brown sugar
  • 1/2 cup canned pumpkin
  • 3/4 cup light molasses
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon

Instructions

  1. Cream the shortening and brown sugar together.
  2. Stir in the canned pumpkin and light molasses.
  3. Sift together flour, baking soda, salt, ground ginger, cinnamon, nutmeg, and allspice;
  4. blend into the pumpkin mixture.
  5. Cover and chill the dough for 2 to 3 hours.
  6. Preheat the oven to 375°F (190°C).
  7. Roll the dough 1/4-inch thick on a lightly floured cloth-covered board.
  8. Cut out pumpkin-shaped cookies with a floured cookie cutter.
  9. Gently place the cookies on a lightly greased baking sheet.
  10. Bake for 8 to 10 minutes or until firm to the touch.
  11. Cool on wire racks.
  12. Decorate with icing, raisins, gumdrops, and candies as desired.
