- Cream the shortening and brown sugar together.
- Stir in the canned pumpkin and light molasses.
- Sift together flour, baking soda, salt, ground ginger, cinnamon, nutmeg, and allspice;
- blend into the pumpkin mixture.
- Cover and chill the dough for 2 to 3 hours.
- Preheat the oven to 375°F (190°C).
- Roll the dough 1/4-inch thick on a lightly floured cloth-covered board.
- Cut out pumpkin-shaped cookies with a floured cookie cutter.
- Gently place the cookies on a lightly greased baking sheet.
- Bake for 8 to 10 minutes or until firm to the touch.
- Cool on wire racks.
- Decorate with icing, raisins, gumdrops, and candies as desired.
