Ingredients

  • 3 cans (16 oz. each) sliced beets
  • 2 Tbsp. cornstarch
  • 1 c. vinegar
  • 1/2 tsp. salt
  • 3 Tbsp. vegetable oil
  • 3 Tbsp. ketchup
  • 1 tsp. vanilla

Instructions

  1. Drain the beets, reserving 1 1/2 cups of juice in a large saucepan.
  2. Add cornstarch to the juice and mix well.
  3. Add the beets, vinegar, salt, ketchup, and vanilla; bring to a boil.
  4. Reduce heat and simmer until the sauce is slightly thickened, stirring often.
  5. Remove the spice bag if used.
  6. Cover and refrigerate overnight before serving.
