  2. Empty the water and refill with clean water.
  3. Bring the beans to a boil.
  4. Add half the olive oil, bay leaves, and roasted peeled bell pepper.
  5. Simmer for 1 1/2 to 2 hours or until the beans are almost tender.
  6. In a frying pan, add the remaining olive oil.
  7. Add chopped onions, minced garlic, ground cumin, and oregano to the pan and sauté until lightly browned.
  8. Add the sherry to the sautéed mixture.
  9. Combine the contents of the frying pan with the beans and continue to simmer until beans are soft.
  10. Add salt and pepper to taste before serving.
