Ingredients

  • 1 salt pork (1 x 3-inch piece)
  • 1 cup diced onion
  • 10 to 12 large quahogs
  • 5 large diced potatoes
  • salt

Instructions

  1. Dice the salt pork and sauté until browned, then add the diced onion and set aside.
  2. Scrub the quahogs thoroughly. Place them in a large soup pot, add water to cover by 1 inch, and cover.
  3. Bring to a rapid boil until the quahogs open.
  4. Allow to cool, then remove the meat from the shells and cut it up, setting aside covered.
  5. Strain the broth and add about 5 large diced potatoes.
  6. Add enough water to cover all ingredients by 1 inch and simmer until the potatoes are tender.
  7. Add the chopped quahog meat to the pot along with the sautéed pork and onion.
  8. Season with salt and pepper to taste.
  9. For a richer flavor, let the chowder sit overnight before serving. Milk or tomato may be added if desired.
