Ingredients

  • 1 large nondairy topping
  • 2 egg whites
  • 2 Tbsp. sugar
  • 1 cup macaroons, crushed
  • 3 Tbsp. sherry

Instructions

  1. Beat egg whites until frothy, then gradually add sugar and continue beating until stiff peaks form.
  2. Gently fold in the nondairy topping, crushed macaroons, and sherry until well combined.
  3. Place cupcake liners in muffin tins to prevent sticking.
  4. Spoon the mixture into the cupcake liners and freeze until firm, about 4 hours or overnight.
  5. Decorate the top as desired before serving.
  6. Serve chilled with a cookie on the side.
