Ingredients

  • 2 (8 oz.) cream cheese
  • 3 egg yolks
  • 3/4 cup sugar
  • 1 can blueberry or cherry pie filling

Instructions

  1. Mix cream cheese and egg yolks until fluffy.
  2. Beat egg whites until stiff peaks form.
  3. Gently fold egg whites into the cheese mixture.
  4. Prepare mini-muffin tins and generously butter them.
  5. Pat approximately 1/2 teaspoon of graham cracker crumbs into each cup, shaking to lightly cover the bottom and sides.
  6. Fill each tin with the cheese mixture.
  7. Bake at 350°F (175°C) for 20 minutes.
  8. Cool the cheesecakes for 5 minutes.
  9. Top each with blueberry or cherry pie filling.
  10. Carefully remove the cheesecakes and serve in pretty glass dishes.
