Ingredients

  • 6 chicken halves, boned and skinless
  • 3 Tbsp. virgin olive oil
  • 2 (4 oz.) jars black currant jelly
  • 1/2 cup Port wine

Instructions

  1. Heat a skillet to 325°F with virgin olive oil in it.
  2. Place the boned, skinless chicken halves into the skillet.
  3. Cook until the chicken is white on both sides.
  4. Mix black currant jelly and Port wine in a pot on the stove.
  5. Simmer until the berries are gone and the mixture thickens.
  6. Pour the sauce over the chicken in the skillet.
  7. Simmer for 30 to 40 minutes or until the chicken is tender, turning often to keep flavor on both sides.
