Ingredients

  • 20 oz. bag frozen shoestring potatoes, thawed and broken up
  • 1/2 cup melted margarine
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup finely chopped onion
  • 1 can cream of chicken soup
  • 2 cups grated Colby cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Spray a 12 x 12 x 4-inch or 9 x 13-inch baking dish with Pam.
  3. In a large bowl, combine the cream of chicken soup, melted margarine, salt, pepper, chopped onion, and grated Colby cheese.
  4. Gently mix in the thawed and broken-up frozen shoestring potatoes.
  5. Pour the mixture into the prepared dish or pan.
  6. Bake uncovered for 35 to 45 minutes at 350°F.
  7. If not browned enough, place under the broiler until golden.
