Ingredients

  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1 tsp. red pepper
  • 3/4 tsp. white pepper
  • 3/4 tsp. black pepper
  • 1/2 tsp. ground thyme

Instructions

  1. Combine paprika, onion powder, garlic powder, red pepper, white pepper, black pepper, thyme, and oregano in a shaker bottle; mix well.
  2. Spray a cast-iron skillet with nonstick cooking spray and heat until very hot.
  3. Sprinkle the catfish fillets with the seasoning mixture on both sides.
  4. Cook the fillets for 2 to 3 minutes on each side until cooked through.
  5. Alternatively, cook over hot coals on a grill.
