Blue Corn Muffins

Ingredients

  • 1 egg, lightly beaten
  • 1 c. milk
  • 2 Tbsp. vegetable oil
  • 1/2 c. blue cornmeal
  • 3/4 c. flour
  • 1/4 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt

Instructions

  1. Butter 12 (3/4-inch) muffin forms or line with paper liners. Preheat oven to 400°.
  2. In a medium bowl, combine egg, milk, oil and blue cornmeal.
  3. Mix well, 8 to 10 minutes to soften cornmeal. In another bowl, mix flour, sugar, baking powder and salt.
  4. After meal mixture has rested, stir to re-mix and add to flour mixture. Stir, but gently, to combine.
  5. Fill each cup 2/3 full. Bake 15 minutes or until brown.
  6. Let pan cool for 3 minutes.
  7. Turn muffins upside down and serve.
