  • 2 1/2 cups sugar
  • 1 cup evaporated milk
  • 1/4 cup margarine or butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup semi-sweet chocolate chips
  • 1 cup milk chocolate chips

Instructions

  1. Combine sugar, evaporated milk, margarine or butter, and salt in a saucepan. Bring to a full rolling boil over medium heat, stirring constantly.
  2. Boil for 6 minutes over heat, stirring occasionally. Remove from heat.
  3. Stir in miniature marshmallows and vanilla until marshmallows melt and mixture is well blended.
  4. Remove 2 cups of hot mixture and add semi-sweet chocolate chips. Stir until chips are melted and mixture is well blended.
  5. Pour the semi-sweet chocolate mixture evenly into a greased 8-inch saucepan.
  6. To the remaining hot mixture, add milk chocolate chips. Stir until chips are melted and mixture is well blended.
  7. Spread the milk chocolate mixture evenly over the semi-sweet layer in the pan.
  8. Chill until firm, about 4 hours.

Tips & Substitutions

For a richer flavor, consider using high-quality chocolate chips or even adding a splash of espresso powder to enhance the chocolate taste. If you don't have evaporated milk, you can substitute it with a mix of regular milk and cream, although the texture may vary slightly. Be sure to stir constantly while boiling to prevent burning, ensuring a smooth fudge consistency.

Serving Suggestions

Cut the fudge into small squares for serving, as it is quite rich. It pairs beautifully with a cup of coffee or a glass of milk. Consider serving it alongside Raspberry Kisses for a delightful dessert platter or gifting it during the holidays as a sweet treat.

Storage & Reheating

Store any leftover fudge in an airtight container at room temperature for up to a week. For longer storage, keep it in the fridge, where it can last up to two weeks. If you want to enjoy it warmed, microwave individual pieces for 5-10 seconds to soften without melting.

Frequently Asked Questions

Can I use different types of chocolate chips?

Absolutely! You can experiment with dark chocolate, white chocolate, or even flavored chips like peanut butter or mint. Just be sure to adjust the sweetness of the fudge accordingly, as some chocolates are sweeter than others.

What should I do if my fudge doesn't set?

If your fudge is too soft, it might need more time to cool and set properly. You can try placing it in the fridge for a few hours. If it's still not firm after that, you can reheat it gently and add a bit more sugar to thicken it up before pouring it into the pan again.

Can I add nuts or other mix-ins?

Yes! Chopped nuts like walnuts or pecans can add a delightful crunch to your fudge. You can also fold in dried fruits or crushed cookies for added texture and flavor. Just make sure to mix them in after the chocolate chips have melted.
