Ingredients

  • 4 cups flour
  • 2 teaspoons baking soda
  • 2 cups soft butter
  • 2 cups light brown sugar, firmly packed
  • 2 cups sugar
  • 4 eggs
  • 4 cups raw, quick cooking oats
  • 2 (3.5 oz) cans flaked coconut
  • 2 teaspoons vanilla

Instructions

  1. Sift flour and baking soda together; set aside.
  2. In a large bowl, cream together the butter, light brown sugar, sugar, eggs, and vanilla until light and fluffy.
  3. Mix in the sifted flour and soda mixture until well combined.
  4. Stir in the oats and coconut to make a stiff dough.
  5. Preheat oven to 375°F (190°C).
  6. Drop rounded teaspoonfuls of dough 2 inches apart on lightly greased cookie sheets.
  7. Bake for 12 to 15 minutes until golden brown.
  8. Allow cookies to cool slightly before transferring to a wire rack.
