Chocolate‑mint ice cream parfait with a crunchy Oreo base, perfect for a quick sweet treat that blends rich chocolate, cool mint and buttery crunch.

Ingredients

  • 1/2 gal mint ice cream, softened
  • 1 pkg. Oreo cookies
  • 1 (13 oz.) can evaporated milk
  • 1/2 c. butter or margarine
  • 2 sq. unsweetened chocolate
  • 3/4 to 1 c. sugar

Instructions

  1. Crush enough Oreo cookies finely to cover the bottom of a square or oblong pan.
  2. Spoon softened mint ice cream over the crushed cookies, spreading it evenly.
  3. Freeze the assembled layer until firm.
  4. In a saucepan, mix evaporated milk, butter or margarine, unsweetened chocolate, and sugar.
  5. Cook over low heat, stirring constantly until the mixture thickens.
  6. Remove from heat and allow the chocolate sauce to cool thoroughly.
  7. Pour the cooled chocolate sauce over the refrozen ice cream layer.
  8. Return to the freezer and chill until the dessert is firm again.
