Ingredients

  • 1 medium orange
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups shredded wheat and bran cereal, finely rolled
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup margarine, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup Dromedary chopped dates or raisins

Instructions

  1. Grate 1 teaspoon of orange rind and set aside.
  2. Remove the remaining peel from the orange; chop the fruit in a blender or food processor, adding enough water to make 1 cup. Set aside.
  3. In a medium bowl, combine shredded wheat cereal, baking powder, and salt; set aside.
  4. In another bowl, using an electric mixer at medium speed, beat the softened margarine, sugar, and eggs until blended. Stir in the reserved orange juice and orange rind.
  5. Stir in the flour mixture until well blended. Fold in the chopped dates or raisins.
  6. Pour the batter into a greased 9 x 5 x 3‑inch loaf pan. Bake at 350°F for 50 minutes.
  7. Cool in the pan on a wire rack for 10 minutes. Remove from the pan and cool completely on the rack.
