Ingredients

  • 2 egg whites
  • 1 cup Kayro syrup
  • Dash of salt
  • 10 large marshmallows

Instructions

  1. In the top of a double boiler, combine all ingredients and bring water to boiling.
  2. Beat egg whites for 5 to 7 minutes until peaks form.
  3. Remove from heat but keep over the water and add marshmallows.
  4. Beat until marshmallows are melted and frosting is smooth.

Tips & Substitutions

For a smoother texture, ensure that the egg whites are at room temperature before beating. If you don't have Kayro syrup, light corn syrup can be used as a substitute. To save time, you can use store-bought marshmallow fluff instead of marshmallows. This icing is perfect for topping cakes or cupcakes, particularly those that may be dry, as it adds moisture.

Serving Suggestions

This icing is ideal for frosting cakes or cupcakes, especially chocolate or red velvet varieties. It can also be used as a filling for layer cakes. For a delightful pairing, serve with a slice of Rhubarb Yorkshire or alongside a Breakfast On-The-Go Drink for a sweet brunch.

Storage & Reheating

Store any leftover icing in an airtight container in the refrigerator for up to a week. When ready to use, let it come to room temperature, then re-whip for a few moments to restore its texture. Avoid freezing, as this may alter the consistency of the icing.
