Ingredients

  • 1 cup unsweetened coconut milk (not cream of coconut)
  • 1 egg yolk
  • 1 1/2 tablespoons vegetable oil
  • 1 1/2 teaspoons coconut extract
  • 3 cups white flour (I used regular)
  • 1/3 cup coconut (yes-the usual stuff)
  • 2 1/2 tablespoons sugar
  • 3/4 teaspoon salt

Instructions

  1. Measure into your bread machine as per it's instructions.
  2. Cook on the sweet, white timer (4 hours on mine).
  3. This makes a 1 1/2 lb loaf.
