Bread Pudding Muffins

Ingredients

  • 1 1/2 c. skim milk
  • 4 egg whites or 2 whole eggs
  • 1/4 c. sugar
  • 1 Tbsp. ground cinnamon
  • 1 Tbsp. vanilla extract
  • 2/3 c. raisins
  • 12 slices whole wheat bread, cut into 1/2-inch cubes (about 1 1/2 qt. cubes)

Instructions

  1. Preheat oven to 350°.
  2. In a large bowl, combine all ingredients except raisins and cubed bread.
  3. Mix well.
  4. Add raisins and bread. Mix well and allow to soak 5 minutes.
  5. Spray standard size muffin tin or custard cups with nonstick vegetable coating.
  6. Mound mixture into each of 10 to 12 cups and bake about 35 minutes or until firm. Cool on rack at least 10 minutes before removing from cups.
