Breadsticks For A Crowd

- In a large bowl, combine 2 cups flour, sugar, salt and yeast. Blend well.
- In a small saucepan, heat water and oil until very warm (120° to 130°).
- Add warm liquid to the flour mixture and blend at low speed.
- By hand, stir in additional 2 1/2 to 3 cups flour, until dough pulls cleanly down and away from sides of bowl. Flour surface and knead 1/2 to 1 cup flour until dough is smooth and elastic.
- Place dough in greased bowl.
- Let double in size. Punch down.
- Divide in half.
- Shape into breadsticks.
- Brush with egg whites.
- Let rise.
- Bake at 400° for 14 minutes.
