Ingredients

  • 2 small tomatoes, quartered
  • 4 tsp balsamic vinegar
  • 5 oz mushrooms, thickly sliced
  • 4 oz baby spinach leaves
  • 2 tbsp coarsely chopped fresh basil
  • 4 slices rye bread, toasted

Instructions

  1. Preheat the oven to 425°F.
  2. Place the tomato in a small shallow baking dish. Drizzle with 2 tsp of the vinegar. Roast, uncovered, for about 10 mins.
  3. Cook the mushrooms, spinach and remaining 2 tsp vinegar in a large skillet on medium heat, until the mushroom is tender and the spinach wilts. Stir in the basil.
  4. Serve the tomato and mushroom mixture on toast.
