- Preheat the oven to 425°F.
- Place the tomato in a small shallow baking dish. Drizzle with 2 tsp of the vinegar. Roast, uncovered, for about 10 mins.
- Cook the mushrooms, spinach and remaining 2 tsp vinegar in a large skillet on medium heat, until the mushroom is tender and the spinach wilts. Stir in the basil.
- Serve the tomato and mushroom mixture on toast.
