Ingredients

  • 7 medium Russet or Idaho potatoes
  • 1/4 cup butter or margarine, melted
  • 1/4 cup salad or olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 teaspoon dried thyme leaves

Instructions

  1. Wash and dry the potatoes.
  2. Mix olive oil, melted butter, garlic powder, salt, and thyme leaves in a pan.
  3. Quarter the dried potatoes and drop a few at a time into the mixture, coating completely.
  4. Place the coated potato pieces in a 13 x 9 x 2-inch baking dish.
  5. Bake at 325°F for 1 hour, turning halfway through the cooking time.
