Brenda's Icebox Pie offers a rich, creamy dessert with coconut, pecans, and caramel layers, perfect for warm days and gatherings requiring a cool, indulgent treat.

Ingredients

  • 1/2 stick butter
  • 1 (8 oz.) package cream cheese, softened
  • 1 can Eagle Brand milk
  • 1 large carton Cool Whip
  • 2 deep shell pie crusts
  • 1 can coconut
  • 1 cup chopped pecans

Instructions

  1. Bake the pie shells and allow them to cool.
  2. Saute the pecans and coconut in butter and set aside.
  3. Beat the softened cream cheese and Eagle Brand milk together.
  4. Fold in the Cool Whip into the cream cheese mixture.
  5. Fill the cooled pie shells with the filling and place in the freezer for 20 minutes.
  6. Layer caramel sauce and the sautéed pecans and coconut on top of the pie.
  7. Freeze the pie overnight.
  8. Keep the pie frozen until ready to serve.
