Broad Bean Puffs

Ingredients

  • 1/3 cup butter, plus extra to grease
  • 1/3 cup all-purpose flour, plus extra to dust
  • 1 lb frozen broad beans
  • 1 2/3 cups milk
  • 8 oz soft goat cheese, crumbled
  • 4 None large eggs, separated

Instructions

  1. Preheat oven to 450°F. Butter and flour eight 1 cup ramekins.
  2. Cook broad beans in a saucepan of boiling, salted water 2 minutes; drain. Cool in ice water; drain again. Remove and discard skins. Place broad beans and half the milk in a food processor; process until smooth.
  3. Melt butter in a saucepan on medium heat. Add flour and cook, stirring, 1 minute. Whisk in remaining milk until smooth. Transfer to a large bowl. Whisk in the goat cheese and egg yolks and season to taste.
  4. Beat egg whites until firm peaks form. Gently fold egg whites through broad bean mixture. Spoon into prepared ramekins. Bake puffs 20-25 minutes, until risen and golden. Serve immediately.
