Broad Bean Puffs

- Preheat oven to 450°F. Butter and flour eight 1 cup ramekins.
- Cook broad beans in a saucepan of boiling, salted water 2 minutes; drain. Cool in ice water; drain again. Remove and discard skins. Place broad beans and half the milk in a food processor; process until smooth.
- Melt butter in a saucepan on medium heat. Add flour and cook, stirring, 1 minute. Whisk in remaining milk until smooth. Transfer to a large bowl. Whisk in the goat cheese and egg yolks and season to taste.
- Beat egg whites until firm peaks form. Gently fold egg whites through broad bean mixture. Spoon into prepared ramekins. Bake puffs 20-25 minutes, until risen and golden. Serve immediately.
