Broccoli Capellini

Ingredients

  • 1 small bunch broccoli (flowerettes only)
  • 1 small jar roasted red peppers, drained and chopped
  • 1 small can chicken broth
  • 2 Tbsp. olive oil
  • 3 cloves minced garlic
  • 1/2 c. grated Locatelli cheese
  • 2 tsp. basil
  • 1/2 lb. capellini
  • salt and pepper to taste

Instructions

  1. Saute broccoli in olive oil until al dente.
  2. Add garlic, peppers, basil, salt and pepper.
  3. Stir 1 minute.
  4. Add chicken broth.
  5. Simmer until capellini are tender.
  6. Toss pasta with sauce. Sprinkle with cheese and toss lightly.
