- Clean figs in water, remove stems, and cut figs in half or leave whole if desired.
- Place the prepared figs in a large pan and sprinkle with 5 pounds of sugar.
- Heat the stove to medium and cook for one minute.
- Reduce the heat to low and stir often for about 4 hours until the mixture thickens and almost no juice remains.
- Allow the mixture to cool overnight.
- Sterilize canning lids, rings, funnel, and dipping spoon in boiling water.
- Cook jars in a 200°F oven for 10 to 20 minutes.
- Place the cooled fig preserves into jars, seal tightly, and process in a water canner for 30 minutes.
- Cool the jars overnight before storing.
