Ingredients

  • 15 c. figs
  • 5 lb. sugar

Instructions

  1. Clean figs in water, remove stems, and cut figs in half or leave whole if desired.
  2. Place the prepared figs in a large pan and sprinkle with 5 pounds of sugar.
  3. Heat the stove to medium and cook for one minute.
  4. Reduce the heat to low and stir often for about 4 hours until the mixture thickens and almost no juice remains.
  5. Allow the mixture to cool overnight.
  6. Sterilize canning lids, rings, funnel, and dipping spoon in boiling water.
  7. Cook jars in a 200°F oven for 10 to 20 minutes.
  8. Place the cooled fig preserves into jars, seal tightly, and process in a water canner for 30 minutes.
  9. Cool the jars overnight before storing.
