Ingredients

  • 2 pt. cherry tomatoes, halved
  • 4 oz. part-skim Mozzarella cheese, cut into 1/4-inch cubes
  • 1/3 c. slivered green olives
  • 1/3 c. chopped fresh basil
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. olive oil
  • 1/2 tsp. salt

Instructions

  1. In medium bowl, combine all of the ingredients.
  2. Toss and serve.
  3. Will serve 4. High in vitamins A and C. One of the best sources of lycopene.
