Caraway Cabbage

Ingredients

  • 1 (2 lb.) cabbage, coarsely ground
  • 1 (16 oz.) can stewed tomatoes (undrained)
  • 1 to 2 tsp. caraway seed
  • 2 bay leaves
  • 2 tsp. lemon juice
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. grated Parmesan cheese

Instructions

  1. Combine all ingredients, except cheese, in a Dutch oven. Bring to a boil.
  2. Cover; reduce heat and simmer 15 minutes, or until cabbage is tender.
  3. Transfer to a serving bowl.
  4. Remove bay leaves; sprinkle with cheese before serving.
  5. Yields 8 servings.
