  • 1 package Lipton dry onion soup
  • 3 cups water
  • salt to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Melt butter in a 9 x 13-inch pan.
  3. Pour in uncooked rice, and season with salt and pepper.
  4. Lay chicken pieces on top of the rice.
  5. Pour Lipton dry onion soup mix over the chicken.
  6. Pour water around the edges of the pan.
  7. Cover with foil and bake for one hour.
  8. Turn off the oven and let set in the oven for one hour.

Tips & Substitutions

For a richer flavor, consider adding sautéed onions or garlic to the butter before adding the rice. If you're out of Lipton dry onion soup, you can substitute with a mix of onion powder, garlic powder, and dried herbs. Using brown rice instead of white will add more nutrients, but adjust the cooking time accordingly, as brown rice typically requires longer to cook.

Serving Suggestions

Serve Carolyn's Chicken Delight with a side of steamed vegetables or a fresh salad to balance the richness of the dish. It pairs beautifully with Rice Stuffed Avocados for a light and healthy alternative. For an added crunch, consider serving with garlic bread or a warm biscuit to soak up the flavorful juices.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in the oven at 350°F (175°C) covered with foil to prevent drying out, or microwave in short intervals, stirring occasionally until heated through. Ensure the chicken reaches an internal temperature of 165°F (74°C) before serving.
