Ingredients

  • 2 Tbsp butter
  • 1/2 cup regular rice
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1 cup chicken stock
  • 1/2 tsp salt
  • 1 egg, beaten
  • 1 cup grated old Cheddar cheese
  • 1/4 tsp Worcestershire sauce
  • 1/2 cup chopped parsley
  • 3 medium avocados
  • 1/2 cup fine dry bread crumbs

Instructions

  1. Heat 2 tablespoons butter in a medium saucepan.
  2. Add rice and cook until golden, stirring.
  3. Add chopped onion and celery; cook gently for 3 minutes, stirring.
  4. Add chicken stock and salt; cover and simmer for 20 minutes or until rice is tender. Remove from heat.
  5. Stir beaten egg, grated Cheddar cheese, and Worcestershire sauce into the rice, then mix in chopped parsley.
  6. Preheat oven to 350°F (175°C). Cut avocados in half, remove stones, and place in a shallow baking pan.
  7. Add 1/4 inch hot water to the pan.
  8. Spoon the rice mixture into the hollows of the avocado halves.
  9. Combine bread crumbs with melted butter and sprinkle over the stuffed avocados.
  10. Bake for 20 minutes or until the crumbs are browned and the avocados are hot.
