Carrot Dumplings

Ingredients

  • 1 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3 Tbsp. shortening
  • 1/2 c. milk
  • 1/2 c. shredded carrots
  • 1 tsp. parsley flakes

Instructions

  1. Sift together flour, baking powder and salt.
  2. Cut in shortening.
  3. Add milk, carrots and parsley.
  4. Stir until flour is moist.
  5. Drop dumplings into simmering liquid in approximately 8 mounds (chicken or beef stock may be used).
  6. Cover and simmer for 15 minutes without lifting cover.
  7. Serves 8 people.
