Carrot Orange Mold

Ingredients

  • 1 Tbsp. unflavored gelatin or orange flavored artificially sweetened gelatin
  • 1/2 c. orange juice
  • 1 tsp. liquid artificial sweetener
  • 1 c. hot water
  • 1/2 c. fresh orange sections, cubed
  • 1 Tbsp. vinegar
  • 1/4 tsp. salt
  • 1/2 c. carrots (raw), shredded
  • 1/2 c. pineapple tidbits (unsweetened), drained

Instructions

  1. Sprinkle gelatin on cold orange juice to soften.
  2. Add softened gelatin to very hot water and stir until thoroughly dissolved. Add salt, vinegar and artificial sweetener.
  3. Chill until thickened. Fold in carrots, pineapple and orange.
  4. Turn into mold and chill until firm.
  5. Yield:
  6. 6 servings.
  7. Carbohydrate 7 g, protein 1 g, fat 0 g, calories 32.
  8. One serving = 1/2 fruit exchange.
