Ingredients

  • 2 lb. catfish, deboned
  • 2 lb. potatoes, sliced
  • 1 lb. bacon
  • 2 lb. onions
  • 1 (No. 303) can tomatoes
  • salt and pepper to taste

Instructions

  1. Cook bacon until crisp in a large heavy pot. Remove bacon and set aside.
  2. Layer remaining ingredients in the pot, beginning with sliced potatoes, followed by onions, tomatoes, and deboned catfish.
  3. Sprinkle with salt and pepper to taste.
  4. Cook at low heat for about 2 hours until flavors meld and potatoes are tender.
