Cauliflower "cous cous"

Ingredients

  • 1 each Salt and pepper to taste
  • 1 tbsp Olive oil
  • 2 clove to 3 garlic cloves
  • 1 each onion
  • 1 head cauliflower

Instructions

  1. Break down cauliflower and remove large stems from florets.
  2. Place florets in food processor and process in quick bursts until cauliflower resembles small bits of gravel or beads.
  3. There may be some pieces that don't process down small enough; these pieces should be removed.
  4. Dice onion and mince garlic.
  5. Saute in olive oil - add onions to pan first, cook until softened, add garlic and saute a minute more.
  6. Remove from heat and transfer to small bowl, reserving oil in pan.
  7. Add cauliflower to oil in pan (additional oil may be needed) and cook until slightly browned - appx.
  8. 15 mins
  9. Add onions and garlic back in pan and quickly toss with cauliflour, add salt and pepper to taste and transfer to serving bowl.
  10. This is just the basic recipe - use your imagination and add whatever you like to switch it up!
  11. I like to finish it with a splash of apple cider vinegar and a squeeze of lemon.
  12. Toasted nuts like sunflower seeds or pine nuts are also good, as is just a simple sprinkling of fresh chopped Italian parsley or basil.
